There's no need to optimize images for your iPhone. iTunes does this for you. It targets your images to 640 x 480. If larger, it shrinks them for you. If smaller, it enlarges them for you. So if you shrink and compress your images for your iPhone in an effort to save size, you won't and they wind up looking ugly. Just let iTunes do its thing and your images will look fine.
